Traditional Butter Cake

Ghana Cake (Traditional Butter Cake)

Ingredients
- 2 cups 250g all-purpose flour
- 1 cup 200g granulated sugar
- 1 cup 225g unsalted butter (softened)
- 4 large eggs
- ½ cup 120ml evaporated milk
- 1 tsp vanilla extract
- 1 tsp baking powder
- ¼ tsp nutmeg optional, for a warm flavor
- A pinch of salt
Instructions
- Preheat oven to 175°C (350°F). Grease and flour a 9-inch round or square baking pan.
- Cream the butter and sugar: In a large bowl, use a hand mixer or stand mixer to beat the butter and sugar together until light and fluffy (about 5 minutes).
- Add the eggs one at a time, beating well after each addition to ensure the mixture is smooth.
- Add vanilla extract (and nutmeg if using), and mix until combined.
- Sift the flour, baking powder, and salt together in a separate bowl.
- Alternate adding the flour mixture and evaporated milk to the butter mixture. Start and end with flour. Mix gently until just combined—do not overmix.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 35–45 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Tips:
- For a richer flavor, some Ghanaian bakers add a tablespoon of brandy or rum.
- You can also add a few drops of almond essence for an extra aroma.
- This cake is often enjoyed plain or dusted with powdered sugar, but you can also serve it with whipped cream or a fruit topping.
