Ingredients

  • ¾ Cup Sliced almonds
  • ¾ Cup Panko Japanese Bread Crumbs
  • 1 Tbsp Dried Basil
  • ½ tsp Celery Salt
  • ½ tsp Minced Dried Onion
  • ¼ tsp Garlic Powder
  • ¼ – ½ tsp Paprika
  • ¼ – ½ tsp Oregano Leaves
  • 1 Pinch of Freshly Ground Pepper
  • ½ Stick of Butter
  • 2-3 Chicken Breasts

Instructions

  • Take the sliced almonds and place in mini chopper.
  • Pulse the mini chopper till almonds are chopped medium to fine grade. Do not over chop or you will have almond butter (like peanut butter)
  • Combine almonds, bread crumbs, basil, celery salt, onion, garlic powder, paprika, oregano, pepper in a bowl and mix with a spoon.
  • Melt the butter and get a basting brush.
  • Place 3-5 spoonful of Nut/crumb mixture in bottom of the pan.
  • Place chicken in pan.
  • Take melted butter and brush on chick. You will not use all butter at this point.
  • Take the Nut/Crumb mixture and cover the chicken.
  • Take remaining butter and pour evenly over chicken/nut/crumb.
  • Place the chicken covered in over for 15 minutes.
  • Then uncover and cook for 10 minutes. After 10 minutes take chick and cut into it to see if cooked thoroughly.
  • If not cook for another 5-10 minutes.
  • Cook times may vary due to the size of chicken breasts, if large breast increase covered time by 10-15 minutes.
